Character: Off-white, innocuous, flavourless semitransparent and amorphous solid with pearly color. Insoluble in water, dilute acid, dilute alkali. Insoluble in water or alkali solution, soluble in inorganic acid like diluted hydrochloric acid and nitric acid. and most organic acid. In diluted acid solution, backbone chain of chitosan will hydrolyze slowly

Water soluble chitosan is refined with special techniques, it can be dissolved in water directly.Ordinary chitosan is insoluble in water and only soluble in some diluted organic acid and inorganic acid, which limits its application. Thus, the application is more convenient and  wider.
